Glycemic Index & LoadsAccording to the University Of sydney, "not all carbohydrate foods are created equal, in fact they behave quite differently in our bodies. The glycemic index describes this difference by ranking carbohydrates according to their effect on our blood glucose levels."Choosing low GI carbs - the ones that produce only small fluctuations in our blood glucose and insulin levels - is the secret to long term health, reducing your risk of heart disease and diabetes and is the key to sustainable weight loss. The University of Sydney has developed a great web site and user friendly database that further explains glycemic index and glycemic load values for all types of foods. Understanding how carbohydrates effect our bodies is important to our health, for preventing major disorders and particularly if you already have a health challenge or are trying to lose weight. The University of Sydney Glycemic Index & Load website and database are helpful tools to teach us how to monitor carbohydrates and their effects on our body. Glycemic indexes and loads are part of the natural health picture, another piece to the puzzle. A Glycemic load of 20 or more is high, a GL of 11 to 19 inclusive is medium, and a GL of 10 or less is low. Foods with a low glycemic load tend to also have a low glycemic index. Foods with an intermediate or higher glycemic load have glycemic indexes that range from very low to very high GI. We disagree with the suggested grain consumption for reasons beyond just the glycemic index or load. We were flesh eating hunter gatherers with periods of food insufficiency before we were farmers. If we had to depend on eating every 2-4 hours we never would have survived, we ate when there was food available. Robert Cryahon MS and author of "Paleolithic Diet"  distinguishes carbohydrates into Paleocarbs which include vegetables, fruits & some tubers and Neocarbs which are carbs produced in the last 10,000 years and include grains, legumes & flours. Cook, veteran Project Manager for the U.S. Treasury Department and Policy Analyst for the U.S. Food and Drug Administration: "Cheap, mass-produced foods are largely based on grains and beef raised by massive agribusiness firms, so that the atrocious American diet is inextricably linked with capitalist enterprise controlled by Wall Street." Grains To BlameAll grains, including organic and whole grains, have nutritional deficiencies, elevate your insulin levels, which increase your risk of serious disease and are often eaten at the exclusion of more nutritional meats, vegetables, fruits and healthy fats.Eating Grains Is Associated with: * allergies * weight grain * chronic disease * high blood pressure * imbalance cholesterol * heart disease * cancer * diabetes * inflammatory conditions Humans thrive better on a biologically appropriate diet of nutrient dense lean meats (not grain fed), fish, nuts, seeds and low glycemic fruits, veggies and other plant based foods. The majority of North Americans have insulin related challenges. Excessive carbohydrates in the form of grains, cereals, potatoes, rice, pasta, sugars & sweets stimulate Insulin and are responsible for all those bulging bellies and rolls of fat. High insulin also suppresses two hormones responsible for burning fats and sugar and for muscle development. More insulin promotes more fat bodies and further prevents our ability to lose fat. In other words grains convert to sugar in your body. How Fat Can You Get?Not to be insulting, but it's becoming increasingly difficult to see reasonably fit Americans of any age. Instead we see young children waddle along next to one or both parents who are also bulging with rolls of fat.There they are sitting in a McDonalds, or other false food restaurants, stuffing themselves with the very false GMO foods that contributed to their obesity. Many of the False Food employees can barely move they are so obese. $17,500 was paid to Brazalian McDonalds employee for gaining 65 lbs from eating McDonald's food! McDonalds I Was lovin it! San Francisco law prohibits the use of toys to entice & bait children to eat food, such as Happy Meals. "Childhood obesity in this country is making our kids sick, particularly kids from low-income neighborhoods, at staggering rates". Toys might still be included if the meals meet certain nutritional guidelines spelled out in the legislation, such as no more than 640 milligrams of sodium, no high sugar soda drinks, and at least a half-cup of fruits or vegetables. The law will take effect in December 2011. Read more at the San Francisco Examiner. We already know the risks associated with obesity. Today obesity affects 30-40% of all adult North Americans. Two thirds of Americans will also develop heart disease. American children are predicted to live 10 years less than their parents. Obesity is caused by over consuming the wrong type of carbohydrates and eating too many empty calories. It's that simple, but not to simple to avoid the wrong foods. Obesity promotes a more sedentary lifestyle and makes you sick and miserable before it slowly strangles your organs in fat and then kills you. Johns Hopkins University published an Obesity Report in July 2008 projecting that by 2030, 86% of Americans will be overweight or obese. Youfa Wang, MD, PhD, projects that 24% of US children and 75% of adults will be overweight or obese by 2015. That's less than 5 years from now and we're still stuffing ourselves to death! If Americans are to conquer obesity and reclaim their health, we must look to our ancestors. We can do this by eliminating or severely reducing our consumption of corn based food, grains, rice, cereals, all sweets, fried foods and sodas. Or we can suffer the consequences and set a ridiculous and pathetic example for the rest of the world. Our Body's Needs Healthy fats are essential for humans. Protein is essential for humans.
